This past week has been challenging emotionally, physically, and intellectually. My Rockhurst friends have an email thread in which each of us has an assigned week to write an update to share. Every Wednesday, it is literally the best and the worst part of the day - the best because I can practically hear the person's update in his or her voice and the worst because it's a weekly reminder of how much I miss my friends from home. Shout out to my friends who read this, I've been missing the hell out of you guys this week.
On a less depressing note, I learned to make pupusas this week! I think I wrote in my last post about how the school hosts different activities for us students to attend and sometimes we get to learn to cook (hence the pupusas). Much to my surprise when I got to the kitchen, I found my teacher preparing the ingredients. (Check out my teacher Miriam in the picture to the right..isn't she the cutest?) Anyway, our pupusas had cheese, onion, and tomato which were delicious. I wish I could eat one right now actually. If you've never had one, I think you should be googling the word pupusa right about now and either looking up how to make them or finding a restaurant that serves them. |
Another of this past week's activities was a hike to La Muela. It started as slightly steep walk uphill and ended with climbing volcanic rocks. I definitely see a theme emerging here - you leave for a caminata thinking it will be a breeze and and it ends up being more of a challenge than expected. This was definitely worth it though. It was nice to get some exercise and get out of the city for a couple hours, not to mention the incredible view.
When I'm not trying to cram Spanish words into my mind, I'm busy consuming as much coffee as humanly possible and reading. It's the rainy season here and today it's pouring but that didn't stop us from doing another really beautiful hike to La Laguna de Chicabal. It was a small group of us and although the hike wasn't easy with how slippery it was, it was enjoyable and rewarding non-the-less.
As I look back through my pictures, it's hard for me to believe that this week was as difficult as it seemed. These pictures are a physical reminder that no matter how challenging something can be, beauty often results from hard work and perseverance.
Thank you for all the thoughts, prayers, emails, and kind words you all have shared with me over the past couple weeks. You're constantly reminding me of how blessed I am and I cannot express my appreciation enough. Hope this update finds you all well.
